Ingredients
Nonstick vegetable oil spray
1 cup cold water, divided
3 1/4-ounce envelopes unflavored gelatin
2 cups sugar
2/3 cup light corn syrup
1/4 teaspoon salt
2 teaspoons vanilla extract
1/2 cup potato starch
1/2 cup powdered sugar
Preparation
Line 13x9x2-inch metal baking pan with foil. Coat foil lightly with nonstick spray.
Pour 1/2 cup cold water into bowl of heavy-duty mixer fitted with whisk attachment. Sprinkle gelatin over water. Let stand until gelatin softens and absorbs water, at least 15 minutes.
Combine 2 cups sugar, corn syrup, salt, and remaining 1/2 cup cold water in heavy medium saucepan. Stir over medium-low heat until sugar dissolves, brushing down sides of pan with wet pastry brush. Attach candy thermometer to side of pan. Increase heat and bring syrup to boil. Boil, without stirring, until syrup reaches 240ºF, about 8 minutes.
With mixer running at low speed, slowly pour hot syrup into gelatin mixture in thin stream down side of bowl (avoid pouring syrup onto whisk, as it may splash). Gradually increase speed to high and beat until mixture is very thick and stiff, about 15 minutes. Add vanilla and beat to blend, about 30 seconds longer.
Scrape marshmallow mixture into prepared pan. Smooth top with wet spatula. Let stand uncovered at room temperature until firm, about 4 hours.
Stir potato starch and powdered sugar in small bowl to blend. Sift generous dusting of starch-sugar mixture onto work surface, forming rectangle slightly larger than 13x9 inches. Turn marshmallow slab out onto starch-sugar mixture; peel off foil. Sift more starch-sugar mixture over marshmallow slab. Coat large sharp knife (or cookie cutters) with nonstick spray. Cut marshmallows into squares or other shapes. Toss each in remaining starch-sugar mixture to coat. Transfer marshmallows to rack, shaking off excess mixture.

hello there, i saw your post on bbdish and thought i'd check out your recipes.
the homemade marshmallows recipe looks interesting. do you know of a way to do it without the gelatin? (making it vegetarian) just thought i'd ask . . .

Haven't looked at a way to make it without gelatin. I'm sure it will get into the more chemical side of cooking, but I'll research it for you.
I don't really hate anyone in BB, but Dan is by far my favorite. I feel bad for Jerry with everyone ignoring him, but I have found him to be down right mean at times. I would like to see either Jerry or Michelle out this week. We'll see how it goes.

MARSHMALLOW SWEETS
4 Tbsp. marshmallow roots
28 Tbsp. refined sugar
20 Tbsp. gum tragacanth or gum Arabic
2 cups water or orange flower water
1-2 egg whites, well beaten
Make up a tea of marshmallow roots by simmering them in a pint of water for twenty to thirty minutes. Add additional water if it simmers down. Strain out the roots. Heat the gum and marshmallow decoction (water) in a double boiler until they are dissolved together. Strain with pressure. Stir in the sugar as quickly as possible. When dissolved, add the well-beaten egg white's), stirring constantly, but take off the heat and continue to stir. Lay out on a flat surface. Let cool, and cut into smaller pieces.
Egg white substitute
egg white = dissolve 1 tbsp plain agar powder in 1 tbsp water. Whip, chill and whip again.

Flax is also used instead of eggs. can't remember if the whole egg or just the white.

It talks about a few different options, but obviously, I'm not vegetarian, so I am not sure how accurate any of the info on the page it. But I truly do hope this helps you out with your marshmellow quest!
wow you're awesome! thank you. it's funny - store-bought marshmallows have gelatin, but store-bought fluff (the marshmallow cream stuff) doesn't. thanks for looking into it - that was really nice of you!
i don't hate anyone in bb either - bad choice of words. i do like dan, and something about michelle has bugged me all season. maybe it's how she's so tough, always swearing and saying how she wants to beat up people or whatever. i'd be glad to see her go, that's for sure.
